For many years i thought i didn’t like pesto until a friend taut me the wonder of having fresh made pesto on a fluffy crusty bread. Since then i make it a lot in the summer when fresh basil is abundant.
below is my basic recipe. How ever, there are so many variations you can make to this dish.
- You can change out the basil for any other strongly flavored green. but i would not use a bitter flavor.
- Try using walnuts or pecans.
- try not using a cheese at all.
- and lastly try using a sweet onion or shallot.
I love this spread so much now and i hope you give it a try. please let me know if you do and what variations you come up with.
Ingredients
- fresh Basil
- Hole Pine nuts
- Parmesan cheese or some other hard cheese
- Garlic optional
Instructions
- Strip off all the stems of the basil and put aside for stock.
- Place the leaves in a food processor to chop.
- When the basil is partially broken down add the cheese in small chunks one at a time blending after each addition.
- Once all the cheese is in add the pine nuts and blend until smooth.
- Serve plain with french bread or use as a sauce for your favorite dish.
